Recent visitors to NZMA’s Cafe Fusion were treated to a taste of the tropics thanks to the efforts of the Fern English for Hospitality class.

On August 28 the students put on a unique feast which they named the ‘EFH Resort Cafe’.  The banquet was part of their Food and Beverage Nutrition and Food Safety Standards module and EFH tutor Cushla McLean said the project involved all aspects of organising and running an event.  Students were assessed on safe and hygienic food handling and service, team work and communications skills.

“Prior to the event students bought costumes, made posters and tropical table decorations and designed blackboard menus.  They chose what dishes they wanted to offer on the day and made ingredients lists and went shopping,” says Cushla.

“On the actual day of the feast they cooked some wonderful main course dishes including kimbab served with tempura soup, nikujaga served with rice balls and tacos as well as green-tea pudding for dessert.  They served the meals to the tables, provided service at the counter and then cleaned up afterwards.  They basically did everything from start to finish.”

The EFH Resort Cafe was a huge success – both for the customers and the EFH class.  Well done!
